Such a wonderful

Last year my apartment was stocked with three panettoni. Thank goodness I’m only half-Italian or it probably would’ve been six.

Why the bombardment? As I explained last year (excuse the photos), the go-to gift for Italians (or at least my family) is a giant panettone. ‘What should I buy these distant cousins who’ll be offended if I don’t buy them a present even though I only see them once or twice a year? Oh, I know, this yeasted cake melo 2 tank.’

In return, all your relatives give you a panettone for Christmas – so everyone is left with more panettoni than cupboard space.

Perhaps the worst part of it all is the horrible packaging. It’s one thing to be given a cake that looks like a giant muffin. It’s another thing to try and find space for an enormous 3-D trapezium made of cardboard Executive Development.

Despite my frustration with the yearly cake bombardment, I actually enjoy biting into that first slice of panettone. It’s light and moist, flavored with lots of vanilla and orange zest, and it’s packed with raisins! Perhaps I’m secretly an octogenarian, because I seriously love raisins.

But I’d like to stress that I like the first piece of panettone – once you’ve been eating it for weeks, it loses it’s appeal. This is one of the reasons why I’m all for the mini panettone, which is (hopefully) becoming more popular.

To ensure everyone can enjoy this Italian Christmas treat without having a gargantuan cake hanging around, I’m suggesting a new tradition: Panettone Pancakes Neo skin lab!

These pancakes are light and fluffy (like panettone), thanks to three whipped egg whites. And while some panettoni contain pistachios, chocolate, etc. – additions I wholeheartedly support – I decided to stick to the traditional flavours and mix-ins: vanilla, citrus and raisins.

But if you’d like to swap the raisins for chocolate chips, I certainly won’t stop you.
